Potato Salad Suggestions for Dad’s 70th

I need some help with potato salad for my dad's 70th birthday. He's serving burgers, and I want a good side that goes with them, but I'm drawing a blank. I don't make it often, so I'd love to hear about any favorite recipes or unique twists you have.

Also, what's the best way to keep mayo-based salads cold at an outdoor party? I want to make sure it stays safe to eat.

Thanks for any tips or ideas. I'm starting to consider just grabbing some from the store.

My wife makes a heck of a potato salad. She tosses all the stuff in by hand so no measurements. I'll ask her about the ingredients when I get home. Fresh chives would be a nice touch. Make sure your serving container is square so it can fit in a cooler sitting on ice.
